
CHOCOLATE CHIP ZUCCHINI BREAD from Wendy
3 eggs
2 c. sugar
1 c. oil
3 tsp. vanilla
2 1/2 c. flour
2 tsp. baking soda
1 tsp. baking powder
2 c. grated zucchini
1 c. chopped pecans
1 c. chocolate chips
1 c. coconut
Beat eggs, sugar, and oil for 5 minutes. Stir in remaining ingredients. Bake 1 hour at 350. Makes 2 loaves.
FRESH TOMATO BASIL & ORZO SALAD from Wendy
1/2 pound orzo cooked in 2 quarts salted water for 8 minutes.
Dressing:
1/3 c. lemon juice
1/3 c. olive oil
1 tsp kosher salt
1/2 tsp. black pepper
Mix ingredients together until blended then pour over warm pasta.
1 small red onion, diced
2 garlic cloves, minced
1 T. olive oil
Saute onion in oil until tender. Add garlic to pan a few minutes before onion is tender. Garlic burns easily! Add onions and garlic to pasta. Cool to room temperature.
Add the following to cooled pasta:
1 container grape tomatoes, halved
15 basil leaves, cut into chiffonade
1/3 c. pine nuts, toasted
1/2 lb. block feta cheese (not crumbles), cubed into 1/2 inch bites
3 scallions, green and white parts, minced
Make this salad 1 day in advance and serve at room temperature. Enjoy!
