watermelon appetizer

I've been crazy nuts for watermelon lately. I was noodling around on the internet, looking for watermelon salad recipes. Came across this one and thought it looked beautiful, simple and good. (from www.visualrecipes.com)


Ingredients:

• Seedless watermelon
• Feta cheese
• Fresh mint
• Hawaiian coarse salt

1) Cut rectangular cubes from watermelon.

2) Use a melon baller to scoop out a small indent in the watermelon cube

3) Fill hole with a little feta cheese, garnish with mint and sprinkle with a smidge of Hawaiian sea salt.

--You’ve given me a right relationship with You. (Eph. 2:8: “For by grace you have been saved through faith; and that not of yourselves, it is the gift of God…)

--I didn’t get to this present day on my own. (I Cor. 4:7b: “What do you have that you did not receive? And if you did receive it, why do you boast as if you had not received it?”)

--You planned this day. (Ephesians 2:10: “For we are His workmanship, created in Christ Jesus for good works, which God prepared beforehand so that we would walk in them.”)

--This day doesn’t depend on me. (II Cor. 12:9: “And He has said to me, "My grace is sufficient for you, for power is perfected in weakness " Most gladly, therefore, I will rather boast about my weaknesses, so that the power of Christ may dwell in me.”)

--You have incredible things in store. (I Cor. 2:9: “but just as it is written, ‘THINGS WHICH EYE HAS NOT SEEN AND EAR HAS NOT HEARD, AND WHICH HAVE NOT ENTERED THE HEART OF MAN, ALL THAT GOD HAS PREPARED FOR THOSE WHO LOVE HIM.’)

Keith and I just tried the Greek Express restaurant on Sancus. It's a small little place with a drive-through, family-owned...same folks who own the Acropolis in Clintonville.  I have to admit that my expectations were pretty low, but boy-o-boy was I surprised! The food is fantastic! And really inexpensive. Keith had a Gyro as big as his head and said it was better than the Gyro's at Phillip's Coney Island downtown...and you all know the special place Coney Island has in Keith's gastrointestinal tract. I had the Falafalel sandwich and it was super yummy. If you like Greek food, try it out. I think you'll be glad you did!

One of my favorite times of the year is Memorial Day weekend. It all begins by getting the house and kitchen in order for guests. Robb's parents come in on Sunday and join Robb, my mom and me for a very moving patriotic service at our church. Veterans and current servicemen are encouraged to dress in uniform and we honor them with word and song. It's a very big deal at Delaware Bible Church. Yes, we are huge flag wavers!

Memorial Day begins with a fun parade in Marysville. I am always so proud of my husband as he helps lead the large marching band through the streets of Marysville playing God Bless America. The parade ends at the cemetary outside of town, where a very meaningful ceremony is held for past and present military servicemen.

After the ceremony, we head back home for a cookout with church friends and family. I am always amazed every year how much I crave this weekend. It is an important time to honor the men and women who have served so courageously for our freedom. I wonder how do the rest of you spend your holiday weekend? Please feel free to share.
