1 cup sugar
1/2 cup vegetable oil
2 eggs
1 cup mashed ripe bananas (approx 2)
1/2 cup sour cream
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
cinnamon (opt)
choc chips (opt)
Preheat oven to 350 degrees. Prepare loaf pan by greasing the bottom. Beat sugar, oil and eggs together until smooth. Add in bananas, sour cream and vanilla, blend well. Stir in the flour, soda and salt until dry ingredients are moistened. Pour batter into pan. Bake 50-60 minutes. Cool 5 minutes before removing from pan. Makes 1 large or 2 small loaves.
