rhubarb recipes

Our friend Amy sent these rhubarb recipes. Just wanted to pass them along. If anyone has a great Rhubarb Custard Pie recipe, I'd love to post that as well!


Rhubarb Crisp

3 c fresh diced fresh rhubarb              
3 oz. strawberry or raspberry jello
 1 c. firmly packed brown sugar            
1 1/2 c. unbleached flour
1 c. quick cooking oatmeal                  
3/4 c. melted butter
1 tsp. cinnamon

Place rhubarb in ungreased 9 inch square dish. Sprinkle jello over fruit.
Mix remaining ingredients together and spread over fruit and jello mixture.  
Bake at 350 for 30-35 minutes.

Rhubarb Crunch

1 c. uncooked oatmeal                                    
3 c. diced rhubarb
1 c. sifted flour                                     
1/2 c. sugar
 1 c. firmly packed brown sugar            
1 tsp. cinnamon
1/4 c. chopped nuts                             
1 T. water
1/2 c. butter

Mix together first four ingredients. Cut in the butter until crumbly.
Place half this mixture in a greased 8 x 8 inch panCover with the
rhubarb mixed with 1/2 cup sugar, cinnamon, and water.
Top with remaining half of oat mixture. Bake 45 minutes in 350 oven.
