
My two favorite apple recipes are actually necessary parts of New Years and Christmas meal traditions. I cannot begin a new year without several helpings of Crisp Apple Scallop made by My Friend Jennie's mom, Jean. It's really easy -
Pare, core and slice six (6) Granny Smith apples. Layer in a greased 2-qt casserole and cover with a mixture of 1/2 C water, 1-1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1 tsp lemon juice. Work together until crumbly: 1 C sugar, 3/4 C flour, 1/2 C butter. Sprinkle over apples and bake uncovered @ 350 for about 1/2 hour. It's never served as a dessert; it's a gooey, crunchy side dish that's GOOOOD.
The other favorite is from my dad, Bryce, and was always a standard menu item on Christmas Eve - Freddie (my brother) and I LOVE them and they make the house smell really good, too. They're Cinnamon Candy Apples. First, make the syrup, by combining 1 C red hots, 1/2 C sugar and 1 C water in a dutch oven and heat on low to medium heat until melted and well-blended. Add to the syrup eight (8) pared, cored and sliced Granny Smith apples. Simmer for about 15 minutes, then let "soak" in the syrup for most of the day. Refrigerate and serve chilled or room temperature, whatever you prefer. We always had it with a big vat of Bryce vegetable soup and warm, buttered French bread. Mmmmmm.
