apple recipes week — susan

There's a nip in the air...the trees are starting to change...fall is definitely here and you know what that means? It's apple season! Hooray! So, this week the Fab Five have decided to share some of our favorite apple recipes, starting with "Spicy Apple Pudding". This is from a friend of mine [Susan], who's grandmother actually won some type of baking award with this little concoction. I'm not sure why it's called 'pudding', cuz it's really a yummy moist cake. Anyway, try it and see what you think. I love the lemon with the apple!

SPICY APPLE PUDDING with LEMON SAUCE

1/4 cup margarine
3/4 cup sugar
1 egg, slightly beaten
1/4 teaspoon salt
1 cup + 2 Tablespoons flour
1 teaspoon soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups chopped apples (my favs are Golden Delish)
1 Tablespoon milk

Cream margarine and sugar. Add egg and beat well. Sift dry ingredients and add to margarine mixture. Fold in apples and milk. Pour into greased 8" square baking pan. Bake at 350 degrees for 30 minutes. Serve warm and top with lemon sauce.

LEMON SAUCE
1 cup sugar
2 Tablespoons cornstarch
1 cup water
1 lemon, grate the rind and squeeze the juice
2 Tablespoons margarine

Mix together sugar and cornstarch in small saucepan. Add lemon rind and water. Cook until mixture thickens. Add lemon juice and margarine. Stir well. Remove from heat and cover until ready to serve. Serve warm, spooned over squares of cake.
